So, for a kilo of pink salmon we take half a liter of water, one hundredgrams of salt, fifty grams of sugar and a spoonful of table vinegar. We boil water, we dissolve sugar and salt in it, then we cool and pour vinegar. The fish fillet is piled in a bowl, poured with a prepared brine and pressed down with oppression so that the pieces do not float up. Leave the fish in the brine for four hours, then remove and a little dried. Salted fillet cut into pieces, add to the dishes with a lid and pour with vegetable oil. We leave the fish in the refrigerator for the night. The salted salmon soaked in oil becomes surprisingly tender.
